Chef Kobe Desramaults' Michelin-starred restaurant Eliane moves temporarily to the Belgian countryside this summer

This summer, chef Kobe Desramaults is moving the team of his Michelin-starred restaurant Eliane out of Brussels to the Pajottenland, a rural region of Flemish Brabant located around 20 kilometres from the capital. The restaurant will be based at Hof ter Bree-Eik, the largest square farm in the region, on the Bree-Eik site in Lennik. While the Brussels restaurant will remain closed during summer months, Eliane at Bree-Eik will offer a unique gastronomic experience in the heart of nature, with 40 covers per service.

This pop-up will feature a product-driven tasting menu, true to the spirit of Eliane, but even more closely connected to the surrounding landscape. Entirely designed around ingredients from the Pajottenland, vegetables, fruits, meat and dairy products, it will follow the rhythm of the region and the seasons.

Bree-Eik is a unique natural site in the Pajottenland. It has over 900 years of history, within a landscape that has been used for agriculture for nearly 2,000 years. Today, Bree-Eik is home to 200 hectares of self-managed farmland, as well as a network of farmers and livestock breeders. All land is cultivated according to organic farming principles and with respect for biodiversity.

This fertile agricultural landscape with its gentle hills, in the heart of the Pajottenland, just 20 kilometres from Brussels, is also known as the Tuscany of Flanders, or the Land of Bruegel, who drew his inspiration here and became its symbol.

The restoration of the Bree-Eik site, initiated in 2021 in close consultation with the municipality of Lennik and with the support of the Flanders Heritage Agency, is rooted in a forward-looking vision: preserving historic structures while integrating a contemporary rural program with minimal environmental impact

At the heart of the site lies a two-hectare vegetable garden, which forms the core of the pop-up. July and August are the peak production months, when everything is in full bloom. The garden, along with the farm’s animals, dictates both the rhythm and the menu. What's harvested, what's ripe, what the land has to offer at that time: the place and the soil determine everything. The concept combines farm-to-table and garden-to-table approaches.

The kitchen garden is cultivated by Jonathan Van Houtte, who is developing a living, biodiverse garden at Bree-Eik where heritage and new varieties reinforce each other. The farm animals are cared for by Ward Borremans and his team. Their work is grounded in expertise and care.

This temporary relocation is also the result of a close collaboration between the Eliane team and the Bree-Eik team, where knowledge, products, and expertise come together.

Desramaults gained international recognition with his restaurant In de Wulf in Dranouter, West Flanders, which, until its closure at the end of 2016, was on the radar of nearly every European gastronome. He later opened the Ghent-based restaurants Chambre Séparée and De Superette, before opening Eliane in Brussels in 2024. The restaurant was awarded a Michelin star and a score of 17/20 in the Gault & Millau guide just six months after opening.

"For me, Bree-Eik goes beyond cooking. We want to create a global experience where landscape, agriculture and gastronomy tell the same story. We work with what we grow, in the garden and in the fields, but we also draw on the know-how and expertise of the region's farmers. It's a collaboration. We're restoring a unique piece of nature, and we're actively working on it. What arrives on the plate is the result. It has to be a gastronomic experience that goes beyond a simple tasty dish; a place where you can fully feel where you are."
